Healthy Pasta Salad with Broccoli and Tomatoes



Here’s a new healthy twist on Pasta Salad!  It’s lighter than those creamy macaroni salads, leaving room for more delicious food at your next BBQ!


2 cups of Rotini or Elbow Pasta (pre cooked)

10 ounces of Broccoli (or thereabouts) cut into florets

1 Cup of Cherry Tomatoes sliced in half

4-5 leaves of butter lettuce, washed and torn into small pieces

4 tbsp Extra Virgin Olive Oil

1 fresh Lemon

Salt & Black Pepper to Taste

(add Feta Cheese if you like)


1- Boil water for the pasta & broccoli
2-Add salt and pasta to boiling water.
3-5 minutes before the pasta is done, toss in the broccoli
4-Strain pasta and broccoli and toss in olive oil and season with salt and pepper
5-Add Cherry Tomatoes and lettuce
6-Squeeze fresh lemon juice and toss
Sprinkle with Feta Cheese if you like, best served right away
