My mom (also named Susan) was recently visiting and we had no dinner plans…she has always been a gourmet in the kitchen! Very creative and talented. We had a bunch of leftovers, so she basically cleaned out the fridge and came up with this amazing meal. I’m so happy to share it with you and have an empty, clean fridge! Add a veggie as a side dish if desired.
Pasta with Chicken/Sausage/Shrimp (whatever you’ve got handy)
Saute Sausage until brown in olive oil and a little butter (shred chicken -cooked -saute shrimp if raw)
Cook pasta until done
Drain reserving 1/2 c water
Mix pasta with a 1/2 c sour cream, olive oil, butter and some pasta water until the right consistency.
In pasta pan add capers and parmesean cheese to taste.
Mix with meats
Stir in and sprinkle in a handful of celantro and/or frozen peas
Add black pepper if desired.
